There’s a number of reasons why you need to grind the coffee fresh. One is that the coffee will lose a lot of its natural oils if it just sits in the grinder and will lose its flavour. Other one is that the grind will need to be adjusted if it’s a particularly hot/humid day or vice versa

As a barista, this video is thoroughly annoying, Espresso needs 8-9 bars of pressure being pushed through it to be considered actual espresso. So a Moka pot or Aeropress won't actually make espresso.

My workplace deals with a coffee club so I could get all the free coffee I want but I'm always worried about being kept up. Sometimes it puts me out like a lightbulb but I work overnight and don't want to roll the dice with being wide awake on top of the daily noises of others waking up as I'm going to bed.

Why not just use the steam wand on your Breville? It does a great job at actually steaming and texturing the milk if you just get to know it. I get it might be expensive, but it's the best thing for steamed milk that you have with you.

Babish won't ever see this, but to make a latte art with foamed milk you just have to make sure that there's not too much foam. You can make a latte with cappuccino foam, as long as you remove some foam and then incorporate the remaining foam into the milk by swirling and popping the larger milk bubbles by banging the jug against a hard surface. It's harder to do, but not impossible and the resulting latte would still be as consistent. - A barista

really fun vid Andrew! just wanted to add some stuff. Espresso in the coffee world has to be brewed using 8-9 bars of pressure, so while a moka pot advertises itself as a stove top espresso brewer its just making very strong coffee. same with the aeropress, both only get up to 1-2 bars of pressure. The Flair is a wonderful home brewer but the clean up is pretty horrible. the shot you made looks delicious though. Also for milk beverages the trick with the french press is the best! But when you pour a latte or cappuccino you don't want to pour as high, you break that layer of crema you worked so hard to make. another fun fact is a cappuccino is meant to be smaller more coffee forward with luxurious foam and a latte as the name suggests is more about the milk with some coffee in it. Starbucks is not wrong to call their drink a Caramel Macchiato since the word means "to mark" and they are marking an upside down latte with caramel. Starbucks also sells a traditional one called an Espresso Macchiato feel free to reach out if you and talk to a roaster, barista, trainer :)

You excerpt 35 lbs of force on the machine, but I don't think you are pressing your coffee with 35 lbs, there is probably a lot more force pushing the plunger down because of the lever. ^^ But the method works for consitency, so no shade. Just saw an opportunity to be a smartass :) I think tamping your coffee in the little mocca pot improves the result because it gets brewed at a much higher pressure. It's the way we do it at home and no matter who visits, they all say they have some of their best coffee at our place.

As far as I know cappuccino is supposed to have far less milk than a latte Macchiato, which you Americans call latte. Not to be confused with espresso Macchiato. The higher quantity liquid is put first because it's "stained" with the other one :)

waited for Shakerato - esspresso and ice in a cocktail shaker. Served ice cold without the ice .... but loved the discription of macciato. Also, if you gently get the coffee grounds in to heap in the mocca pot and put cold water in it and set in on the lowest possible flame - you get a much better approximation of a good espresso. Also, I heard it said, that if you take a few spoonfuls of the first liquid that comes from the mocca machine and mix it with some sugar, you can recreate the crema. Never tried it. love your videos!

Hi Babish. Have you tried a flat-white? I hear they're pretty rare in the US. A nice modification for a 'magic' is 2x Ristretto shots (stop extracting about 2/3 of the way through) for some better oils with less silt. Then top up with 3/4 of the glass in silky steamed milk, minimal foam. The stretched milk blends better with the oils, and if it's been steamed right the milk proteins have broken and released a few sugars to help bring it all together. ... Yes I live in Melbourne...:)
